At White Squirrel Kitchens, we use traditional cheesemaking techniques—culturing, aging, and rind development—to craft cheeses that are every bit as complex and delicious as their dairy counterparts.

Our white-rinded cheeses develop real, edible rinds, and every variety is carefully aged to let the cultures work their magic. The result? Flavor and texture so rich and nuanced, you might forget it’s dairy-free.

"How your cheese is made?"

White Squirrel Kitchens cheeses are handcrafted using time-honored cheesemaking techniques.

It all starts with nuts - the base and main ingredient for every variety. After being processed into cheese curd and inoculated with the mother culture, each cheese is aged with care and monitored closely for the perfect temperature, humidity, and ripening conditions. 

Every wheel is nurtured until it reaches peak flavor and texture, just like traditional dairy cheese -- but without the milk!

Short answer: Yes, it tastes like real cheese — because it’s made like real cheese.

We use plant-based versions of traditional cheese cultures and age our cheeses anywhere from 14 days to 2 months, depending on the variety.

Our base? Cashews and almonds.

They make up about 90% of the ingredients, with a few extras in our aged cheeses to support the fermentation process.

It’s real cheese, just reimagined — no dairy needed.
