WSK Leyden is our version Leidse Kaas, a Dutch cheese made with cumin seed. Much like its Aged Gouda sister cheese, it boasts a robust natural rind, and a dense creamy interior.
Flavors: rich and complex, reminiscent of 24–36-month-old dairy versions, salty, sharp, with notes of caramel and cultured butter and the peppery pop of cumin throughout.
Pairing Suggestions:
Leyden holds up on its own with some dark crusty bread, but likes ripe stone fruit, berries, dark bread, hearty seeded crackers, vegan cured meat alternatives, or as a surprise ingredient in omelets and potatoes. Medium bodied wines such as Shiraz, Grenache, Barbera, or Riesling whites, and of course craft beers make this cheese sing!
